Although originally accrediting its origins to Syria in the 2nd century, cauliflower has been a major crop in Northern Europe (including Holland) since the 16th century. The varieties we use in Holland provide a bright white floret with a milk, sweet, almost nutty flavor. Cauliflower is not only very healthy, but it takes on the flavor of any dish its cooked with. Due to that, feel free to use as an ingredient, side dish or starch replacement.
